I love to eat, and I love to eat healthy food. Here are some of my favorite recipes that I have enjoyed on my Bridging the Gap into Wellness project. I thought I would share them with you.
chopped cucumber, chopped tomato, kalamatta olives
sprinkle with your favorite low calorie vinaigrette
sprinkle lightly with fat-free feta cheese
option to add chunks of turkey breast for added protein
Spaghetti with Shrimp and White Beans (my husband's favorite)
1/4 lb whole-wheat spaghetti
4 tsp olive oil
1 onion, finely chopped
1 fennel bulb, finely chopped
4 garlic cloves, minced
1 C rinsed and drained navy beans
1 lb shrimp, peeled and deveined
1 C chicken broth (I like organic)
2 tsp lemon juice
1/2 tsp crushed red pepper
1/4 C fresh basil leaves, thinly sliced
(optional: sprinkle with your favorite cheese like Parmesan, goat, or feta)
1. Cook the pasta according to package directions, omitting the salt if desired. Drain.
2. Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the onion and fennel. Cook, covered, until translucent, 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Stir in the beans, shrimp, broth, lemon juice, and crushed red pepper; cover and bring to a boil. Reduce the heat and simmer, covered, until the shrimp are just opaque in the center, 3-4 minutes.
3. Toss the shrimp mixture with the pasta and sprinkle with the basil.
Apple Berry Salsa (my favorite sweet treat)
1 pt strawberries
2 tart apples, like Granny Smith
1 sm orange
2 Tablespoons brown sugar
2 Tablespoons apricot jam or apple jelly (I like apricot preserves)
Baked Cinnamon Chips
Coarse chop strawberries and kiwi in food processor. Set aside in another bowl. Peel and core apples; coarsely chop in food processor. Add to strawberries and kiwi. Zest orange to measure 1 tsp zest. Juice orange to measure 2 tablespoons juice. Add zest, juice, brown sugar and preserves to fruit. Combine all. Refrigerate until ready to serve. Serve with baked cinnamon chips or make your own using Pam non stick spray, whole wheat tortillas, lightly sprinkle with sugar/cinnamon in oven 400 degrees for 8-10 minutes.
